4 large scallops, either fresh or half shell frozen
10 scallops meat 
Handful of fresh chopped parsley
5 tablespoon extra virgin olive oil
1 tablespoon lemon juice
Salt and pepper
1 garlic clove, chopped


Heat some olive oil in a sauce pan. When hot, add the scallops meat. Fry over a moderate heat for 5 minutes on each side.

Add the parsley and garlic and fry for a further minute. If your scallops are fresh, sieve the juice and add to the pan. Season with salt and pepper, add the lemon juice and mix.

Spoon scallops into the shells with some of the pan juices. Serve with lemon wedges.
